You'll be fine with douglas, which I assume (but don't know for sure  
as I don't live in the UK) shouldn't be difficult to buy and don't  
need to be specifically 'designed for straw bales'.
Don't go with naturalhome - they'll want to sell you a pre-fab  
structure (with OSB on the inside...) - a company that jumped on the  
straw bale bandwagon here in France without a real added value (and a  
poor perception of the real advantages of building with straw bales).
I can see why you're hesistant about loadbearing or minimalist framing  
(which would imply 'filling in' with bales as you build along - see  
for instance Tom Rijven's minimalist approach: http://www.habitatvegetal.com/ 
  ), similar to my own preference to get the roof on first (see: https://picasaweb.google.com/101112994520905931740/ 
  ), but with a 6x8 structure I'd probably be less anxious as it's  
quicker to build than our 16x8 + garage/workshop structure.

Make sure you protect your walls against driving rain
